Mushrooms & Zuccini Risotto

Today’s lunch was spiced pumpkin cream and this delicious risotto!

You will need:
1 medium Onion
1/2 Zucchini
1/2 cup of mushrooms
1 Garlic Clove
1 cup of Rice
2 cups of water
1 cup of White Wine
Salt & Pepper

Cut the onion and the zucchini in little cubes.
Stir fry the onion and the garlic clove, when they are golden add the zucchini and stir fry a bit more.
Add the rice and 1 cup of water, let it cook. Slowly add the other cup of water and the white wine. Add salt and pepper.
Let it cook, when the rice is almost done (risotto is meant to be a bit creamy, the rice doesn’t have to get dry) add the mushrooms and let it cool a bit more.
