Gazpacho Andaluz

This is one of my favourite Spanish dishes!
I’m spanish so its time to start sharing our amazing recipes with you!
Is so easy to prepare, its delicious, so easy to prepare and SUPER HEALTHY
You can have it at any time, as juice or as soup if you add the vegetables and the bread in little cubes.

You just need: (makes a big pitcher)1 kg of Tomatoes

1 cucumber (not too big)
1 medium Green pepper
1 garlic glove
3 tablespoon of olive oil
1 tablespoon of vinegar
Salt

You just have to put everything in the blender, add the oil, vinegar and salt and blend again (do not do it with a juicer! BLEND IT). Try it and adjust the flavour to your taste with the salt, oil and vinegar.
You can have it like this but it might have lumps, depending on the blender, so I recommend to use a strainer to make it softer.
Gazpacho tastes so much better when is really cold! So put it in the fridge!
Now you just choose how to enjoy it! just as a fresh juice or as a soup adding little cubes of tomato, cucumber, pepper and toast bread!
